We often hear in our vernacular:

 * Intelligent people are brightgates3

* Talented people shine

* Happy people beam

* Successful people are on fire

* Wise people are enlightened

This is what the Bible says in Ecclesiastes 9:11

I returned and saw under the sun that:-

‘The race is not to the swift’ – Meaning even the slow can win a race (like the snail and the tortoise)

‘Nor the battle to the strong’ – Meaning even the weak can win a battle

‘Nor bread to the wise’ - Meaning even the not so wise can have material things

‘Nor riches to men of understanding’ - Meaning even without much knowledge you can have riches or wealth

‘Nor favor to men of skill’ – Meaning even without skill you can win favours from others

‘But time and chance happen to them all’ – Meaning God will give us a time and an opportunity to be what we want and where we want to be.

The question is: Are you prepared to have your dreams come true? Do you want the chance?

Think about it- if you are deciding to go into business or to further your studies! Nothing is imposible for God – for those who love Him!

Who we are is not what we think or imagine!

Who we are is not what we say or claim!

Who we are is what we do. If you rob, the  you are a robber.If you kill, you are a killer. If you cheat, you are a cheat. If you worship, you are a worshipper. If you pray, you are a person of prayer. If you are a counsellor, you counsel.Well, I guess you got my statement.

Try to examine what you do today and then put the appropriate word to show you who you are.

“I’m Bored!”

BoredomAs a pastor I often hear people telling me that they are bored. One reason is that such people are afraid of risk and prefer the bland, the predictable, and the repetitive. We eat out once a week, on every Sunday night, at the same restaurant, order the same dishes!

People tell me that they are tired of their sad mood, fatigue, and loss of interest in things that previously gave them pleasure. They have trouble sleeping or they are sleeping all the time; their appetites are absent or excessive. They are irritable – some even wish that they were not born! They have lost the art of being happy!

Think of it: If you have useful work, sustaining relationships, and the promise of pleasure, it is hard to be unhappy.

You know what? Can I suggest three things that can make you happy? The three components are:

1. You need something to do – Suggestion: Serve in the church

2. You need someone to love: Suggestion: Love God with all your heart, all your soul, all your mind and all your strength and love your neighour as yourself – LOVE GOD and YOURSELF FIRST!

3. You need something to look forward to: Suggestion: Have a vision for your life , align your vision with God’s given vision for the church.

It is only a suggestion – put in your own if the ideas do not fit!

Old Too Fast Smart Too Late

Do you realise that we seem to know the answer after the fact? Meaning we get wiser after the event! Many times we get frustrated and tell ourselves – ‘Why didn’t I think of it before?’ So to prevent ourselves from ‘getting old too fast let’s get smarter sooner than later.’ I told myself ICC could have had so many opportunities to increase our assets by now.’ So there you are – I should have gotten smarter then!

Think about it. Give more thoughts and give a feedback.

The Map Is Wrong If It Does Not Agree With The Ground

1. If the map doesn’t agree with the ground, the map is wrong. • 

 a. We have to recognise the truths and the facts. Truths will bring us to a place where the facts don’t fit. In such a situation we say the facts do not match up with the truth. So we say, “If the map does not agree with the ground we are standing, the map is wrong. If the facts do not agree with the truth of God’s word, then the fact is wrong!

b. Many times our ‘map’ is in our thinking. We think certain ways because we have been conditioned by the routine of life and experiences of life. We expect certain results when we follow a ‘formula’ or the mental ‘road map’. When we don’t get the result – we sometimes continue to follow it hoping it will get right. Sadly many times we ended up in disillusionment/disappointment.

c. People go through life following their ‘map’ is like going round and round but going nowhere!

d. The Bible teaches us to Change – Romans 12:1-2.

e. Transform by renewing our mind or our ‘mental map’ – stop conforming to the old map when it is not leading to the right place or expected right place.

f. We need to renew our mind DAILY – you cannot put new wine into new wineskins. We need the wineskins to be renewed so frequently. To me it is like the multimedia world – forever changing technology, we cannot just hold on to the things that work for us last year! We need to flow with the time

g. God’s time is changing and changing faster than most people imagine or think!

God loves you – let’s learn to change, you never know what’s around the corner.

‘Dog Eat Dog’ World

dog eat dog worldIn the business world we have to  be wise like a serpent and gentle like a dove. In other words, wisdom of God is needed and at the same time we have to learn to be calm and collected at all time – good and bad.

In every business we must count the cost befoe we venture out. I learned a few things from the movie, ‘Red Cliff’: The Emperor wanted to take control of China and so decided to wage war against a province with a much  smaller army. But the leaders of the small province called for help from another smaller group. Together they strategised against a stronger and greater army of the Emperor. They eventually defeated the Emperor.  It is like what Luke 14:31 says, “What king, when he sets out to meet another king in battle, will not first sit down and take counsel whether he is strong enough with 10 thousand men to encounter the one coming against him with 20 thousand?

Proverbs 24:6 “For by wise guidance you will wage war, and in abundance of counselors there is victory.”

Count the cost before you begin can help to avoid an expensive mistake. 

If you are thinking of starting a business or partnering with someone you need to plan and pray and  take counsel of wise people. Meaning know your present competitors and the future ones as well. Know your product. Know your own capability and capacity. Finally always invite the Holy Spirit to be your ‘Real Partner’ and therefore consult Him in every situation.

DM Beef Rendang

This is the best and quick method. Anyone who has a pot and a stove CAN COOK

Shin Beef is the best for this dish. Remove as much fat as possible. Get the butcher to cut into reasonable bite size.

Ingredients:

Tom Yam Sauce (One with galanger/lemau perut or keifer lime leaves) The spices as stated on the label would be the ingredients for rendang.

Use the quantity that suits the amount of meat.

Few stalks of smashed lemaon grass

Add more keifer leaves.

Put all into a big pot and boil with some water. Then Add tins of coconut milk – again depending on the amount of meat.

COOK until tender. Add salt and sugar to taste.

Fry some dessicated coconut until brown. Add and stir. Ready to serve.

Deep Fried Stuffed Chicken Wings

Stuffed Chicken Wings

Stuffed Chicken Wings

Ingredients
18 chicken wings
100g minced pork
1.5cm ginger, finely chop, corinader leaves and garlic all finely chopped.

Half a tin of Bamboo shoots minced – or amount as you like. Shallots – a few strands – finely chopped. Watercrest about half a tin – minced
1/2 tbspn light soy sauce
1/4 tspn white pepper
pinch of salt
18 toothpick

Using a sharp knife, remove the tips of the chicken wings by cutting through the first joiunt. Trim the knuckle from the base of the wings so that you expose the small bones on either sides. Place the wings in a steamer for like 20 minutes. Set aside to cool before attempting to remove the bones.

Use your thumb and forefinger to gently slide the bones out through the opening at the base of the wings. Return them to the steamer(with the heat off) to keep them warm while you prepare the stuffing.

In a large mixing bowl, work the minced pork and all ingredients with your hands for several minutes until it becomes elastic. Add the ginger, soy, pepper and salt and mixed thoroughly. Begin stuffing the chicken wing using toothpick to seal the ends of the wings.

Bring the master stock to boil and simmer for 5 minutes. Allowed to cool in the stock before refrigerating until ready to serve. Alternately, marinate in soy sauce

Another way is leave out the steaming steps. Remove the bones with a small sharp knife. Marinate the deboned wings with mixture of soya sauce and oyster sauce. Stuff wings as above. Coat it in a bowl of eggs. Then coat with a mixture of cornflour and plain flour (2:1 ratio). If not just coat with self raising flour to give you another effect.
Deep fry the wings until golden brown and serve.

Hainanese 8-Treasured Braised Pork Leg

IMG_4997Hainanese 8 Treasured Braised Pork Leg

A small pork leg. Get the butcher to debone. Keep the shape of the pork leg meaning the skin.

Minced pork, water chestnut, mushroom, shallots, coriander leaves, button mushroom, Chinese five spice, garlic, and nstar aniseed. Salt and pepper. Dark soya sauce, light soya sauce, oyster sauce, rice wine or sweet sherry

Mince all the ingredients together. Aniseed is used in the boiling stock. Make sure the mixture is tasty.

Skew up the ends of the pork leg.

Braised in a hot pan. Turn in the process, until it is brown.

Boil in a pressure cooker with stock – add dark soya sauce, light soya sauce, sherry or rice wine, crushed 1 bulb of garlic, add some sugar. Pressure cook for 30 minutes – 45 minutes.

When soft and tender place in a bowl. Thicken the sauce with corn flour.

Serve with hot rice. Garnish it with lettuce and coriander leaves.

Deep Fried Crispy Skin Chicken

deep fried crispy chicken1. Marinate the chicken size 15 with ‘Ng Hiong Fun’ (Chinese five spice – obtained from any Chinese supermarket or medicine shop), salt and pepper.  If you prefer, add honey as well.

2. Rub the chicken outside and inside.

3. Hang out in the sun to dry.

4. When dried, heat wok with oil for deep fry.

5. Fry chicken in hot oil until golden brown.

6. Cut to bite sizes.

7. For the sauce, mix salt and pepper and five spice powder.
